		<description>My immediate thought is that you&#039;d want an apple with a high acidity (think salted vine-ripe tomatoes...) to balance the salty sweetness. Pink Lady is a tasty, sweet apple, but isn&#039;t usually very tart. I think Fuji sounds like a good one to test. Or Braeburn. I don&#039;t know a lot of apple varieties, but those two tend to have a great texture and high acidity.</description>
