Lovica - those are wise words of an ant! ;) Seriously, though, let me know if sun drying in the actual sun works for you. I've not had success up here, yet. By the time I have a huge wealth of tomatoes, the scorching, sunny, consecutive days become rarities. And don't get me started on the filbert fiasco in the backyard this summer.

I'm wondering why the tomatoes are being dried in the oven (or dehydrator) instead of the sun? Too hard to control the heat? Bugs? Already too cloudy in Seattle? It seems a shame to have the oven on for hours when you could be using the solar energy for free. I've suddenly become interested in preserving foods - canning, drying, etc. Haven't yet done anything, but reading this has given me one more nudge in that direction. Given the amount of sun we get down here in Oakland I'm thinking it shouldn't be hard to dry fruit sans gas. BTW, as always your photos just astound me. They're so beautiful!
