Alison, yes! Just call them "roasted" and they don't sound so bad. :) Slice them less thinly and lay them out in a single layer on the sheet pan. 350 degrees, maybe shake the sheet once or twice. Length of time would depend on thickness of the cut. 15 minutes total? If I were to do this I would not roast until dried-out crunchy, though...I'd do it until the surfaces in contact with the sheet were caramelized, browned, maybe a bit crisp.

Hey Anne, I have deep fear and loathing of deep frying, as well- could I bake those beets? Baked beet chips sound horrible, don't they. Can it be done? Would it be worth it?

Thank you so much, Audrey! Yeah, I get it with the fear of frying. Is it that danged oil/water problem? The pops and splatters? They scare me. Though I have to tell you, because I pressed the water out of those beets and avoided all water during cooking time, there was zero splatter. It was a drama-free frying session.

Anne, your photos are so stunning. I can't stop looking at these beet chips and dip. Of course, I'm not actually cooking them as I have a fear of deep frying. That's why I had to leave the South.
