I made gazpacho today - two kinds. And I used a trick I learned from a Chez Panisse cookbook of mixing them both in the same bowl. It was a hit chez moi. http://www.facebook.com/photo.php?pid=3168097&l=5d273f4f81&id=587081418

Lovica, I haven't ventured into using watercress in gazpacho--in fact, whenever I get my hands on the properly ripe ingredients at this time of year I just get greedy and nostalgic for that original flavor I had so much that summer...but this year I might be able to tear myself away from the standard style. I like your canned tomato idea--I've also used a pinch of sugar before, and that seems to help as well. I had to try that since our tomatoes aren't always as good as the ones down there in California. When I was in LA last spring I had this insanely good stuff, and it was SPRING! And I could taste the sunshine anyway. It blew my mind.

Your gazpacho looks wonderful and refreshing. I just made gazpacho yesterday, but instead of the tomato variety I made it with mixed melons from the farmer's market. It was definitely yummy, but I think I'll add some tomato to it today and see how that goes.

Also, have you ever tried adding watercress? I usually make my tomato gazpacho with watercress for a fun zing and flecks of green. And if for some reason the tomatoes don't have enough flavor you can add a little bit of canned stewed tomatoes to kick up the tomato flavor.

One last note: we recently had a gazpacho trio from a tapas restaurant here in CA. One of them was the white ajo blanco you mentioned. It was certainly interesting, but I think I prefer the acidity of the tomato-based soups.

What a great recipe! It is absolutely perfect for this ridiculous weather. We didn't do dishes for three days because it was too hot to run the dishwasher! Lots of different salads, lettuce, quinoa, pasta, etc.
