		<description>Yes! the only potato salads I have come close to really liking (including the recipe I posted) are ones where the vinegar/acid soaks in while the potatoes are still hot.  That is a magical thing.  My mom makes one like that and it tastes great.  After writing this post and thinking some more about it, I think another problem is the whole cold-potato thing.  There is just this vast terrain of cold potato and it just brings the whole flavor to a flatter place.  Another concern is the type of potato often used that has that kinda mealy texture.  I was just thinking it might be interesting to a) dice it up in smaller pieces but I wouldn&#039;t want to overcook it--the pieces would disintegrate into tiny lumps, and b) make sure the potato is either waxy or at least not a particularly mealy type.</description>

		<description>I have definitely had a crank-turning potato salad, brought to a barbecue by a happy German woman from Chip&#039;s work. I do not have the recipe, but the secret seems to be in making a dressing that is vinegar based instead of mayonnaise. The dressing is cooked first, then tossed on the potatoes. They soak in the flavor while the dressing is still warm. I have potatoes waiting to come out of the ground, so maybe I will do some salad experiments and report on the results.</description>
