You sparked my crepe mood and I am makeing roasted banana crepes with Cajeta (from Mod Mex by Scott Linquist) this weekend. You are right on with the flavor layering concept. I will often add a touch of whatever ground spice was used in cooking a dish to it just before serving. A ground spice added in at the last minute will bring back flavor nuances that were lost during cooking. The mushroom filling sounds fantastic. You are right on with the flavor layering concept. I will often add a touch of whatever ground spice was used in cooking a dish to it just before serving. A ground spice added in at the last minute will bring back flavor nuances that were lost during cooking.
