		<description>The mushroom filling sounds fantastic. You sparked my crepe mood and I am makeing roasted banana crepes with Cajeta (from Mod Mex by Scott Linquist) this weekend. 

You are right on with the flavor layering concept. I will often add a touch of whatever ground spice was used in cooking a dish to it just before serving. A ground spice added in at the last minute will bring back flavor nuances that were lost during cooking.</description>
