Very clear and informative post. Excellent and sparing use of well-done photos. Keep it up... you stand out positively among many, many lesser food blogs.

Diana, I find that my model is one of the best in the biz. She really knows how to sell those crepes! She even does the work for free, as long as there's food involved.

Oh yeah, Lovica. I really liked it with eggs, myself. Definitely would be gorgeously good in a quiche.

Wow. What a great memory - thanks for reminding me of the crepefest. I, too, have avoided venturing into crepe-land, but maybe I shall try it. Or maybe I'll just take that mushroom leek filling and add it to a quiche...

Thank you, Susan! I hear you about the klutzy flipping... you should see some of my pancake fiascos. The thing that makes me happy about crepes isthat they are pretty much dry by the time it is time to flip, so at least I don't have batter splatter everywhere!

What an excellent tutorial, Anne! I adore crepes, but I am, shall we say, a little "crepe challenged". I'm the klutziest flipper ever! You've motivated me to try my hand at them again!

Carol, that sounds like a great tool to have. I have been wanting to try one of those batter spreaders, too. They look like so much fun to use. I have 2 crepe pans, but it would be great to have the two surfaces side by side like that. Can you adjust the heat on your waffle iron, or is it automatically set to the right crepe-making heat?

Great tutorial. It's been years since I last made crepes; it's clearly time to get with it and start flipping crepes. My waffle iron plates can be flipped to create a flat griddle for making pancakes and it works great for crepes with the bonus of being able to cook two at a time. I use one of the funny little wooden T-shaped crepe batter spreaders to spread the batter.
